region’s wines. Dinner is served from 7.30pm and includes a delicious 4-course
menu specially created by the Executive Chef, Luke Davis, to complement the 5 different wines (including aperitifs).

THOMAS LAMUDE, SOMMELIER
I was born in France near Jurançon in the beautiful South West region. France is a well-known country worldwide for its wines diversity. The Southwest region of France is particularly recognised for its Gastronomy and for wines such as the Petit Manseng or Tannat. I have worked with many of the world’s best sommeliers and even won the Guy Blandin trophy in 2006. I am delighted to join the team at The Milestone and reveal my passion for wine.

I am delighted to join the team here at The Milestone and I work to the same philosophy of the Red Carnation group ‘no request to large no detail to small’. We have a wonderful menu for you to choose from, but if you would like something simple that is not on the menu, then of course we can do it. I make a point of spending time in the dining room with our regular guests to know their likes and dislikes and I will look forward to meeting you personally in the restaurant.

Friday 28th November 2008 - Champagne Gosset, Ay, France

For four centuries, great care has been taken to maintain the reputation of the brand "Champagne Gosset", and to preserve a family know-how in making champagne.
In 1584 Pierre Gosset, alderman of Aÿ and wine-grower, made still, mostly red wines from the grapes he harvested from his own vines. In those days, two wines vied for pride of place at the table of the Kings of France : the wine of Aÿ and, from some hundreds of leagues further South, the wine of Beaune. Both were made from the same grape varieties Pinot Noir and Chardonnay. The reputation of the wine of Aÿ was such that François the First had his own winery built there, which is now owned by Champagne Gosset. Then, in the 18th century the wine made in and around Aÿ began to bubble, and the Gosset family turned naturally to the production of champagne.

Domaine Chevrot, Cheilly-les-Maranges
Situated at the very south of the Côtes d’Or, the Maranges appellation sits on clay/calcareous soils with Jurassic limestone subsoil. With 13 hectares of vines devoted to biodynamic viticulture, there is no lack of commitment at the family-owned Domaine Chevrot. Purity is the aim, tempered with affordability - both are achieved - though the estate never rests on its laurels.
Average vine-age here is 35 years but the fact that some parcels are as old as 60 years, perhaps helps to illustrate that there is nothing average about this estate. Pablo is currently the incumbent Chevrot, becoming the fourth generation to manage the estate when he took over from his father in 2002.

Anton Bauer, Donauland
A fourth generation of the Bauer family now run the winery, the present incumbent Anton Bauer having taken over its management in 1992. Anton has continued producing Grüner Veltliner and Riesling (the region’s traditional white wines), but has also proved the area can yield excellent red wines.
Anton Bauer does not just follow international trends. His wines are true to their territory. These wines reflect their soil, climate and grape varieties as well as having a distinct Anton Bauer touch.

Bouchard Finlayson
Bouchard Finlayson of South Africa is the estate that produces tonight's wines, set in the Hemel en Aarde Valley near Hermanus. A small cellar dedicated to the making of Pinot Noir, Sauvignon and Chardonnay Wines, the 19 hectares planted with grapes are a stone's throw from the Atlantic Ocean, making the coolest wine-growing region in The Cape. Wine maker Peter Finlayson will be joining us for the evening.

Andre Jacquart
Andre Jacquart are a family owned Champagne house based in Vertus on the Cote des Blancs. It is run today by the Doyard family, the business is a marriage between Andre Jacquart’s daughter and Maurice Doyard, whose father Pascal Doyard had been a leading light in the CIVC. Today the business is run by the next generation. The interests of each respective side of the family were combined in 2004 and with this has come investment including new presses and tractors. They currently produce 90,000 bottles a year.
Both sides of the family brought vineyards to the venture – Jacquart 15ha Mesnil plus 1ha Oger, while Doyard brought 5ha Vertus plus 1ha Mesnil. The average age of the vines is 40 years.

Alves de Sousa
Quinta da Gaivosa – Quinta vale da Raposa
In 1987 Domingos Alves de Sousa, the descendant of a family of Douro Valley winegrowers, abandoned his career as a civil engineer to dedicate all his efforts to managing the family’s “Quintas” (estates). When he took this step Domingos had already decided to stop supplying wine in bulk to the blending houses and embark on the most arduous, but more rewarding, strategy of bottling his own Douro wines.
He reorganized and combined his plots of vines, studied viticulture and winemaking (attending courses both in Portugal and Bordeaux) and put together an experienced team. The construction of a modern cellar at Quinta da Gaivosa was the final step before beginning production of wine from the grapes grown on the family’s five “Quintas”.
Since then, the wines of Domingos Alves de Sousa have received increasing recognition for their quality, gaining various awards and favourable reviews in wine magazines. The highlight of this successful trail being recognised ntwice as: “Producer of the Year”, by Revista de Vinhos (The Portuguese Wine Magazine) in 1999 and 2007 – the most important and prestigious award for a Portuguese wine producer. Domingos is the only person to have won this award twice.
