Known for its dramatic and delicious concoctions, the barmen at the Lodge share their favourite warming winter cocktail recipes.

 

Famous for its fantastic, locally sourced food, The Lodge at Ashford Castle also excels when it comes to creative cocktails. Here, the hotel’s Quay Bar and Brasserie generously shares some of its favourite winter cocktail recipes that can be easily recreated at home.

The Captain In Port is a wonderfully fortifying and hearty cocktail that’s certain to banish any winter chills. With a clever hint of citrus and honey, which helps provide a smooth and fresh finish, it’s best enjoyed in front of a roaring fire.

Additionally, we love the spicy warmth of the bar’s Kentucky Mule, a twist on a classic cocktail that’s made with bourbon for a sweet, spiced edge. The moreish sweet and sour flavours of the Bitter Sweet Symphony are a must-try, combining cherry and lime with Irish-made Dingle vodka.

Winter Cocktail Recipes

CAPTAIN IN PORT

Ingredients

50ml Captain Morgan’s Spiced Rum

15ml Lemon Juice

15ml Natural Honey

15ml Egg White

35ml of Ruby Port

Method

Add the rum, lemon juice, honey and egg whites to a cocktail shaker and shake well.

Add ice to the shaker and shake again before straining the mixture into a chilled martini glass.

Pour in the port over a bar spoon, gently moving the spoon around the glass to create a swirl effect.

Garnish with a sprig of rosemary and enjoy!

KENTUCKY MULE

Ingredients

50ml Bulleit Bourbon

15ml Fresh lime juice

15 ml Simple syrup

35 ml Ginger Beer

Method

Fill mixing glass with ice and add the bourbon, lime juice and sugar syrup. Mix with a bar spoon.

Strain over ice into a rocks glass. Top with ginger beer and garnish with a twirl of lime zest.

BITTER SWEET SYMPHONY

Ingredients

35ml Dingle vodka

15ml Fresh lime juice

15ml Brown sugar syrup

35ml Cherry syrup

25ml Aperol

Method

Fill a mixing glass with ice and add the vodka, lime juice, sugar syrup, cherry syrup and Aperol. Stir with a bar spoon.

Strain into a chilled cocktail glass and garnish with three cherries on a cocktail stick.
