Head Sommelier

The Food & Beverage department is looking for a Head Sommelier  to join the team. You should have a proactive attitude, excellent communication skills and an approachable and friendly personality.

Key responsibilities include:

  • Oversee the effective operations of the Ashford Castle Sommelier team, leading the team in ensuring that we meet & exceed guests expectations regarding the service of all wines and beverages
  • To be responsible for the ordering, storing, stocktaking and serving of all beverages in the restaurant and throughout the hotel
  • Working closely with Restaurant Manager and Executive Head Chef regarding the implementation and sourcing of a balanced wine list that complements the restaurant menu
  • Meeting with potential clients to assist in selecting wines for functions, ensuring they are in stock, stored appropriately and the correct temperature prior to the event taking place
  • Ensuring that all bar and waiting staff's wine knowledge is at an acceptable level, and provide training where required
  • To carry out performance management techniques including appraisals with the Sommelier Team, in line with RCH Policies & Procedures
  • To be proactive about generating sales for the hotel - approaching guests and availing of all opportunities for maximising revenues for the department
  • To assist in the preparation of George V Dining Room in hands on capacity for lunch and dinner wine service. To assist in morning service which includes glass washing, table preparation, table service, when required by management
  • Leading the Sommelier team in ascertaining guest satisfaction, confidently offering suggestions, and responding urgently and appropriately to guest concerns and requests
  • Providing the Guest, at all times, with the highest levels of guest care and personal attention, where possible anticipating the guests needs and initiating actions to exceed expectations where possible

The ideal candidate for the Head Sommelier position should:

  • Have previous sommelier experience within the 5 star hospitality environment
  • An interest & passion for wine service and a qualification in this area (WSET Level 2 or above)
  • Have strong communication skills
  • Have strong attention to detail
  • Have strong leadership & people management skills
  • Have the ability to handle busy situations and manage your workload effectively
  • Have a friendly & outgoing personality
  • Be enthusiastic & flexible (need to work 5 days over 7 day period, inclusive of some weekends)
  • Be legally eligible to work in Ireland

This is a full-time position, working five days a week between Monday and Sunday.
